    Mexico meets Asia in this unique fusion dish! And with soy sauce, veggies, and lechon asado, there are flavors to satisfy everyone in your family.


    • 2 cups cooked UNCLE BEN’S® Original Converted Brand Rice
    • 3 eggs
    • 1 tablespoon soy sauce, plus more to taste
    • 1/2 cup chicken broth, as needed
    • 2 tablespoons vegetable oil
    • 1 cup onion, chopped
    • 1/2 cup carrot, chopped
    • 2 cloves garlic, minced
    • 2 cups cooked ham, diced (or lechon asado)
    • 1/2 cup frozen green peas
    • 1/2 cup green onions, chopped 


    1. Cook rice according to package directions.
    2. In a small bowl, whisk eggs with soy sauce and 1 tablespoon of chicken broth.
    3. In a frying pan over medium heat, add 1 tablespoon of oil and pour in egg mixture and let cook 2-3 minutes forming an omelet. Fold over the eggs once, and let cook through.  Remove to a plate and allow the eggs to cool slightly before cutting into thin strips.
    4. Add remaining oil to pan. On medium-low heat, sauté onions and carrot until onions are translucent. Add garlic and continue to cook 2 minutes, making sure not to let brown.
    5. Stir in rice to onion mixture and add chicken broth, slowly making sure not to make the rice “soupy”. The amount will depend on how dry your rice is.
    6. Add a few splashes of soy sauce for good measure. Fry the rice mixture for several minutes, stirring frequently.
    7. Add cooked egg slices, diced ham and green peas. Stir gently until everything is well mixed and let cook for a few minutes. Add splashes of soy sauce as needed.
    8. Stir in chopped green onions and remove from heat and serve.
